    What is the difference between Wagyu, Toriyama and Kobe? Wagyu: Literally means Japanese cow, bred with varying levels of purity in U.S.A Australia. Toriyama Umami Wagyu: New qualities and flavors in Wagyu (only 2 animals per month are imported into the US from the foothills of Mt. Akagi) more rare than Kobe. Kobe Wagyu: A very particular strain of Wagyu called Tajima-Gyu raised to strict standards. Farm feeding in Hyogo Perfecture in Kobe Japan. Only 3000 cattle certified per year. Wagyu entrees served with truffle mashed potatoes. "Japanese standard" BMS - base marbling score (1-12).
