Our Fused Olive Oils are created by crushing ripe Tunisian Chetoui or Chemlali olives with whole fresh fruits, herbs or vegetables that are picked in season. This process creates a bright, fresh fusion between the oil from the olives and the essential oils released from crushing the fresh produce. Frozen or freeze dried produce is never used in the production of our Fused Oils, making them truly seasonal and sensational.
Our Infused Olive Oils are flavored by adding essential oils, extracts and concentrates to olive oil that has already been produced. Our Infused Oils are free of synthetic chemicals and flavors. Most importantly there's never an attempt to hide poor quality, rancid oil by simply adding flavor to it. The base oil that is used for our Infused Oils is always an Ultra-Premium Certified Extra Virgin Olive Oil! Currently the base oil being used is an Ultra-Premium Arbequina from Chile.

All of our dark balsamic vinegar is produced in Modena, Italy in the Traditional Style and has just a 4% acidity. White Trebbiano grapes are picked, squished and cooked in copper kettles over extremely high heat to caramelize the grape sugars. This "cooked grape must" is then aged in wood barrels.
Our white balsamic vinegar is also produced in Modena, Italy from white Trebbiano grapes and has 5.5% acidity. After the grapes are picked and squished, the juice is simmered slowly under high pressure to prevent the grape sugars from caramelizing.
