Our Texas staple, this perfectly smoked brisket is why we stay up all night for. Smoked for 12 hours, our brisket is full with flavor - for a denser texture, specify lean, but if you like a juicy and a piece of meat that melts in your mouth, fatty is our choice! Please note that there may be a chance the brisket sells out before we know it!
Our spare ribs are slowly smoked and the meat is so soft, it falls off the bone! Please note that a half pound of these big boys can include two or three ribs per order, and five or six per pound, depending on their size. Both our sauces are served on the side.

As we smoke our chicken at a low temperature for a longer period of time, the process creates a nice pink tinge to the meat in the middle - but do not be afraid, that's just a result of the smoking process! We carefully check the internal temperature for all meats, so - Karen, you're safe!
