Ensalada de Nopales (noh-PAH-lays) a light fresh salad prepared with oval leaves of the prickly pear cactus that are pale to dark green. Nopales have a delicate, slighty tart veggie flavor (vegetarian, wheat-free). Chopped with tomato, onion, cilantro, cabbage, and lime.
