      miso caramel, house-made carrot vinegar and avion reposado tequila. it's alive! constantly changing, and tasting unlike anything else. thankfully, that's super tasty. microbes have been making our food taste better (and last longer) for many centuries, it's time they worked harder for our drinks. fresh, with an earthy bite

    • Rumtopf

      new york state cacao prieto rum, boozy fruit capped with sparkling wine and a dash of cacao pietro dark rum. a traditional german practice that preserves the year's fruit under a layer of sweet rum. our's will change throughout the year with flavours of the previous season mingling together in a tasty fruit hooch solera. simply served long with sparkling wine. golden, honeyed and with many layers.

    • Polleno

      sour apple, sweet apple, fino sherry and fennel pollen. taking the tartness of under-ripe apples, balanced with some creamy sweet apple puree, we mix in some green, ultra dry sherry and a flicker of fennel pollen. fresh, subtle and moreish.

    • Deadly Nightshade

      roasted aubergine, bacardi 8yr aged rum, lillet blanc, vanilla demerara and lemon. vegetables in my cocktail! roasted for some extra sweetness, the eggplant is perfectly placed here. it's vegetal (duh) with an earthly sweetness that provides an amazing flavour and texture to this rum sour.

    • Celery Fizz

      house-distilled celery root spirit using new york states, bootlegger vodka, pineapple gastrique, verjus and soda with compressed pineapple. celery root and seed preserved and concentrated by cold distillation and utilising the soft texture of bootlegger vodka - lengthened with bright verjus, tropical pineapple and chilled soda. short, snappy and very fresh.

    • Waggledance

      new york state's mckenzie rye, mohawk valley fall honey, oxidised tea vermouth. pernod absinthe and preserved apricot. bees chat away through the medium of dance (seriously) as they find new outposts of precious nectar. local, floral mohawk valley apple blossom honey compliments the spice of local rye and is given length and spice with our vermouth and a hint of absinthe. rich, boozy and complex.

    • The Chocolate Cocktail

      yellow chartreuse and preserved cherry liqueur with a whole egg. trust us on this one. you'll be switching from omelettes to cocktails in no time. rich and sumptuous with a warming, herbal tail.

    • Holy Spritz! For 1, 2 Or 4

      house-made dry apple peel vermouth, st. germain elderflower liqueur, torched blueberry and fennel shavings. house-made rose seltzer. the spritz is de riquer for good reason. pretend the heady days of summer are still here! light, fresh, delicate and perfect for sharing. using the bounties of the season.

    • Apple Candizzle

      belvedere vodka, lime, apple, blackberry liqueur with candied cinnamon. cracked pepper spice and creaminess from belvedere vodka, lengthened with fruit and candied spice.

    • Bloody Ernest

      cold dried tomato, red grapefruit, lime, maraschino, bacardi special edition white rum and orange bitters. concentrating the sweetness of heirloom tomatoes without sacrificing their delicate perfume and putting them at the heart of this crisp daiquiri.

    • Jasmagne

      henry's house distilled jasmine liqueur, preserved cherry and champagne. white flowers and champagne; true elegance. delicate jasmine blossoms are cold distilled and lightly sweetened with raw cane sugar. it gives us the floral base that's gently lengthened with veuve clicquot champagne. champagne has a unique zesty and heady brightness that opens up beautifully with the liqueur. our house preserved cherries provide the last memories of summer. a subtle and elegant opener.

    • Gold Fashioned

      corzo anejo tequila, laird's bonded applejack, house bitters and chili maple-wood with rhubarb bacon. very much one to sip and savour. taking the simplicity of a 'cocktail' (and remember, sometimes the simplest are the best) - a blend of spirit(s), bitters, a touch of sugar and water (ice) - to create a rich, spicy and bold drink. not for the lighthearted. or vegetarians.
