after many requests, we finally developed an oatmeal raisin cookie! our version is a delightful take on the traditional -a soft cinnamon oat cookie loaded with purple and golden raisins, and topped with a sprinkle of sea salt. absolutely delicious.

throwing away scraps in a pastry kitchen is always a difficult thing to do, so we finally figured out a way to use our delicious trimmings. the cookie waffle scraps from our cocoa caramel stroopwafel make up a chewy and chocolaty base for the bar. we then slather on a layer of our housemade roasted sea salt peanut butter and crispy rice cereal, which is coated in dark belgian chocolate and crunchy grey sea salt.
