Our smokehouse specialties are prepared from the finest ingredients selected specifically for the brushy mountain smokehouse. Boston butts and st. Louis style ribs are cut and trimmed from premium pork to meet our specifications. Pork butts, chicken and ribs are cooked in our natural gas barbecue pit and smoked to perfection using local hickory logs.
- Additional Topping
  
  The pork butts are slow-cooked for eleven hours, the ribs and chicken are cooked for two and one-half hours to an internal temperature of 190 degrees. Cooking the barbecue, chicken and ribs using hickory logs creates a pink tint in the meat and a delicious, hickory smoked flavor
