Large roll. 1 roll cut into 6 pieces. Futomaki (??, "thick, large or fat rolls") is a large cylindrical piece, usually with nori on the outside. A typical futomaki is 5-6 centimeters (2?2.5 inches) in diameter. They are often made with 2, 3, or more fillings that are chosen for their complementary tastes and colors. Gluten free.
On rice. Nigirizushi (????, "hand-pressed sushi") consists of an oblong mound of sushi rice that the chef presses between the palms of the hands to form an oval-shaped ball, and a topping (the neta) draped over the ball.
No rice. The word sashimi means "pierced body", i.e. "??" = sashimi, where ?? = sashi (pierced, stuck) and ? = mi (body, meat). Sashimi is often the first course in a formal Japanese meal, but it can also be the main course, presented with rice and miso soup in separate bowls. Japanese chefs consider sashimi the finest dish in Japanese formal dining and recommend that it be eaten before other strong flavors affect the palate.
