Our pulled Chicken is made from our smoked chicken quarters which include the thigh and leg of the bird. We tightly wrap the skin around the quarter creating a jacket to keep the moisture in the meat. This part of the chicken contains a bit more fat but also contains a lot more flavor. Served with a scoop of Corn Cake & Pickled Vegetables.
Wu Tang Wings start with fresh jumbo wings. We smoke them for around an hour on a Cherry wood influenced hardwood blend. Right before finishing, we pull them off the smoker and let them rest to help retain their moisture. Lastly, we flash fry them - finishing off the cooking process and crisping up the skin. We then sauce the wings with our spiced up homemade yellow sauce.

A Half Rack of Our Smoked Baby Back Ribs. Our ribs are dry rubbed in a semi-sweet, semi-spicy pork rub before hitting our smokers for 8-12 hours. Our ribs are one of our most popular items.

Two Tacos. Detroit pressed corn tortillas filled with smoked pulled chicken. Topped with our house smoked red salsa sprinkled with Queso fresco and cilantro. Served with a scoop of Corn Cake & Pickled Vegetables.
Saddleback Mac & Cheese. Five Cheese blend sauce mixed in with Gemelli Pasta.
Corn Cake. Cross between Cornbread and Bread Pudding. All of our trays are garnished with a scoop of Corn Cake. Jalapenos are in the mix but they are only there for flavor. Don't be worried, they don't really add any spice to it.
Full flavor Baked Beans with a bit of heat. We use a blend of Kidney Beans, Chili Beans and Great Northern Beans. Mixed with onion, chipotle, molasses mustard and ketchup.
Sweet Potato Mash drizzled with a Vernors Ginger Reduction, garnished with Crunchy Sweet Potato Straws tossed in Cinnamon and Spice Rub.
