A Hunan staple food. This dish consists of cured pork belly, chicken and fish. It is hand-cured at our restaurant for up to a week and then steamed so the meat stays soft and not jerky. This dish goes especially great with white rice.
Dried radish is a very common food to eaten by the Hunan people. Here we mix it with our cured pork. It's a good dish to go with rice.
Made famous by Chairman Mao. There are a lot of braised pork bellies in China, mostly consisting of a soy sauce base. But Chairman Mao did not like the taste of soy sauce so the chefs specially made this dish for him without using soy sauce. They made the pork fatty but not greasy and kept it's rich red color without using soy sauce.
