In Chinese, the word for this dim-sum specialty is translated to "phoenix claws." The feet, which are served intact, are deep-fried and stewed in a savory sauce. While there isn't much meat on here, the flavorful gelatinous skin is what's prized.
Pork ribs are chopped into tiny pieces and steamed with black bean sauce. While the bones make up the majority of this dish, it's the flavor and texture that people admire most?not so much the meat. Corn starch is what gives the ribs the signature, lubricious texture, and a dash of fermented greens or chili peppers adds a bit of a kick.

Pork buns stuffed with char siu (a.k.a. barbecue pork) is a stalwart in the dim-sum field. But they're even greater when baked with a thin layer of maltose glaze on top, which renders it both sweet and savory. The bun is pillow-like and melts at first touch.

Servers will typically cut them in half for you. Sesame balls, once considered a palace delicacy, can be dated all the way back to the Tang Dynasty.

It's a sponge cake made out of egg, sugar, and cake flour, and has bounce of an angel food cake, though is significantly moister. This cake traces its origins back to Malaysia and has made its way to dim-sum tables across the globe.
