Our baby back pork ribs are from the back loin of the hog. These types of ribs are commonly referred to as baby back ribs. They are rubbed with a blend of chili powder, paprika, salt and pepper, then smoked for approximately two hours.
Our barbecue chicken is prepared by rubbing the birds with a blend of chili powder, paprika, salt and pepper. We then smoke them for approximately 2 hours. Our BBQ chicken is moist and tender and retains a flavorful, smoky taste. It is served with Smokehouse sauce; however, it occasionally is requested with North Carolina sauce.Note - Because we smoke our meats over hickory wood the meat will look pink, due to colorization from the hickory smoke
Our BBQ beef is from the brisket of the cow. It is smoked using the same methods and times as pork shoulder. It is then chopped more coarsely than the pork. Although tender, beef is not as tender as the pork. Like the pork, it is served with one oz. of BBQ sauce (2 oz. at dinner). Our BBQ beef is typical of the BBQ found in Texas with a Georgia style of BBQ sauce. Occasionally, a guest may request North Carolina sauce on his BBQ beef
Our BBQ pork is from the shoulder (BUTT) of the hog. It is rubbed with a blend of chili powder, paprika, salt and pepper, then smoked for approximately l2 hours. The meat is then pulled from the bone and coarsely chopped ready for service.

Johnny Rebs' beef ribs are from the back ribs of the cow. They are considerably larger than pork ribs; therefore, the number of ribs per plate is decreased despite the same weight as pork ribs. They are also rubbed with a blend of chili powder, paprika, salt and pepper, then smoked for approximately 2 hours. The skin is then removed and the racks are sliced into individual ribs. Our beef ribs are served with Smokehouse sauce; however, occasionally they are requested with North Carolina sauce. Although tender, the nature of beef is not as tender as pork. They are sold for carry out by the ½ or full rack (3 to 5 bones for us)
