The Blue Nile has succeeded by sticking firmly to its Ethiopian roots. Service is gracious in this quiet, private setting. The menu has only two choices: ''all you care to eat'' vegetarian or the ''Ethiopian feast,'' which includes chicken, lamb and beef. Seven vegetables and four meats are arranged in little piles on top of a huge communal round of injera, Ethiopian spongy bread.
