The Scene
Ever wished you could cook your sushi just a little? Shabu-Zen replicates those trendy Tokyo restaurants where you cook raw meat, fish and vegetables yourself in a bubbling pot of broth. (Shabu-shabu, as this cooking is called, is named for the sound of chopsticks swishing meat in the soup.) Visit at lunch on a weekday to learn the drill, then come back on more convivial weekend evenings.
The Food
That's chicken broth simmering in the pot. Follow the lead of regulars and add vegetables, soy sauce and hot pepper to customize to your taste. Unless you have a special craving for, say, beef tongue or sea squirt, it's easiest to stick to a seafood or meat sampler with either thick wheat noodles or spidery rice noodles. Everything cooks in 30 seconds or less. Meat and fish are good enough to eat raw--and even better when simmered.
