One of our most flavorful and healthy dishes, only like creole in appearance. Piquante standing for pungent, describes the sharp citrus taste which characterizes sauce piquante. Contains no roux or oils, but loaded with vegetables, chicken and tomatoes.
Crawfish Etouffee $9.95 - $15.95
One of our most popular dishes. A large amount of vegetables, including onions, green peppers, green onions, and celery, are smothered in a light roux, and then the mixture is cooked down. The last step involves the delicate spicing of the mixture and the addition of crawfish.

Tomatoes are stewed down slowly and seasoned with a delicate blend of creole spices. Large amounts of fresh green onions and bell peppers are added and cooked. Finally, crawfish that has been cooked in sweet olive oil is incorporated to produce a triumph in taste.
