Chicago's fondness for the coach who delivered the Bears' only Super Bowl title extends to his namesake restaurant. Rich woods, leatherette booths and reverentially displayed sports memorabilia create a manly sporting-club setting. The pigskin menu features chops, steaks, salads, seafood and oyster shots with Tabasco vinaigrette. ''Da Pork Chop'' is a serving of that other white meat.
