The Scene
The look and feel of a serious barbecue shack find: gravel parking lot, broad-planked wraparound porch, massive red-brick smoker and plenty of friendly ''how y'all doing'' servers bearing towering plates straight from butcher block to table.
The Food
Hard-core traditionalists beware: Swallow at the Hollow is more of an homage to regional barbecue than it is a barbecue joint, per se. Start with the sauces--three of them--heretically consorting at each table. Then add some broad concessions to modern tastes: Lean baby backs, smoked turkey and a ''pit cooked portobello'' center a menu otherwise built around expected chopped and sliced favorites. A little frou-frou? Sure, but by the end of the meal, you'll find that shortcomings in authenticity get carried over by unabashed friendliness and devotion to flavor.
