A noisy, family-friendly setting make this lesser-known cuisine seem both comforting and exotic. Rookies should go for masala dosa, a huge, thin rice and lentil pancake rolled into a tube--it looks like a sleeping bag on a platter--served with chili-spiked coconut chutney and tomato-y sambar. Or opt for uthapam, a soft pancake filled with ingredients like tomatoes, peas, cilantro and onion. Eaten in triangular wedges dotted with sauce, it's an Indian spin on pizza.
