From the street, it looks like a Japanese fast-food joint--a small space tucked into a strip mall. But inside, colors dance on walls and glass, a surfer rides down a painted wave and the dining room feels comfortable. The fish includes rich salmon, salty mackerel and the vivid Hawaiian roll, which is layered in seven types of fish and packed with crab and avocado.
