Guests enter this adobe fort through the dusty courtyard, passing a trading post full of Native American art. The restaurant sprawls through rustic rooms that make the distant downtown lights seem surreal. The historic recipes are based on painstaking research; they include deep-fried Rocky Mountain oysters with a spicy dipping sauce or tender rattlesnake cake--like crab cakes, but better. The entree standout is buffalo steak--a tender, juicy delight, and more healthful than beef.
