Baumkuchen is a traditional German cake, baked on a spit by adding layers of batter while rotating. In a similar way to kasutera, it has evolved to become softer and lighter than its German ancestor and it is a popular sweet in Japan today. We made our baumkuchen with rich almond powder and gave it a hint of rum: the result is a moist and light sponge cake that would wow any guest.

Kasutera has a fascinating history. First brought to Japan by Portuguese merchants in 16th century, the name derives from the Portuguese pão de castela, meaning "bread from castile. " through five centuries of reinterpretation and refinement, kasutera has become a delightfully light and smooth sponge cake. We offer our kasutera in honey (plain) flavor and green tea flavor.
