In Short
Sandstone-colored walls and terra cotta floor tiles set the western tone for this unique dim sum-style restaurant. ''Gaucho'' servers, dressed in traditional ranchero garb, approach tables carrying skewers of grilled meats, including garlic beef, leg of lamb, pork loin, sausages and chicken, allowing customers to choose exactly what they want. Red-and-green table totems indicate to servers whether to approach a table or not. The extensive salad bar offers sauteed eggplant, pasta, greens and dessert.
