In Short
In addition to the kind of cowboy-sized portions of bone-in rib-eye that you could only find east of Highway 67 (until now), Cowboy Star also brings what they call the ''romance of the Old West'' to the East Village. We're not sure how exposed wooden beams and big, bright, meaty butcher shop are supposed to get hearts fluttering, but the old-school cocktail list and sweeping landscape murals are nostalgic enough. But make no mistake, owner Jon Weber and chef Victor Jimenez are definitely doing something that hasn't been done yet on this side of the tracks.
