The Scene
The quiet contemplation at the heart of Japanese cuisine meets the rambunctious personality of West Hollywood. The lighting is bright, the noise level is high and the bussers look like they could easily slip into the lineup at a TGIFriday's. All in all, it's the type of environment that encourages diners to knock back a round of oyster shooters far more than it begs them to quietly study the nuances of a perfect piece of raw fish.
The Food
Have a waiter direct you to the small clutch of chef Nobu Matsuhisa's most famous dishes or put yourself in the hands of a sushi chef for an omakase tasting menu. The ''new style'' sashimi is the best example of the chef's style: Thin strips of halibut or yellowtail are given a flavor lift from unexpected ingredients like garlic and cilantro. The black cod with miso is a sensuous mix of firm, white-flesh fish and a molasses-like coating.
