The food combines the cuisine of an indigenous culture with ingredients and cooking techniques introduced by the Spanish. Potatoes, rice, beans, corn, chilies, cilantro and lime are used extensively. At Peruanitos, begin with papas a la huancaina (boiled potatoes in a creamy pepper sauce), papa rellena (picadillo in mashed potatoes and deep fried) or causa rellena de atun (a chilled layering of spiced mashed potatoes, tuna and mayo).
