One of the country's most successful steakhouse empires attracts a casual crowd with huge, reasonably priced steak dinners and a tempered Texan milieu (country music and imposing cattle busts). Wise diners turn off their internal calorie counters, as many menu items arrive fried, covered in cheese, or both.
